Improving microgreens growing by tackling inefficiency

"We see it as our responsibility to place our production facilities at the heart of our customer base, ensuring our commitment to sustainability and quality" starts Alex Pichardt, Director of Micro Greens who is also a trained chef de cuisine on the side. With locations in Ringe and Fredensborg, two different regions of Denmark, Micro Greens runs a growing business, producing mushrooms and microgreens. With over 500 collaborating partners across Denmark, the company operates on principles of trust, service, and knowledge-sharing, building relationships that go far beyond the traditional customer-seller dynamic. The company operates a 2,000 m² farm in Ringe and an 800 m² facility in Fredensborg. They opened a second farm in Czech lately and collaborate with a partner in Austria. "

"Accept the market you are living in"
From using coffee grounds as a growing medium to reusing 99% of nutrients in compost, they demonstrate their dedication to creating a circular production. Twenty percent of Micro Green's total product harvest is mushrooms, which are sold in 2 kg boxes, whereas the remaining chunk is microgreens. Harvested and delivered within max. 10 hours, restaurants can always count on fresh product quality upon delivery. "Like many in the industry, we are facing challenges from low-cost imported alternatives, which drive down our prices. To stay competitive, we're focusing on cutting costs, by producing seeds in-house at lower prices, for instance. Accept the market you are living in, as it will make your business more lean and effective," he states.

In all operations, the firm entirely relies on Staal & Plast trays. "Their products are extremely well-engineered" Alex shares enthusiastically.
