Organic Florida mushrooms thrive at Lion Farms

On 15 acres in the Redlands, just south of Miami, Peter Fedele runs Lion Farms, a zero-waste, 100 percent organic regenerative farm producing nearly a dozen varieties of gourmet mushrooms available for sale and delivery to local homes and restaurants. The farm also produces subtropical fruit including bananas, sugar apples, soursop, and avocados, as well as turmeric, microgreens, organic chicken eggs, aquaponics-raised Nile perch, and New Zealand rabbits.
